Extra Cheesy Cauliflower Breakfast Casserole

- 2 bags frozen cauliflower
- 6 cage-free eggs, lightly beaten
- 1 C. milk
- 3/4 C. cheddar cheese, grated
- 3/4 C. swiss cheese, grated
- 1/2 tsp. garlic powder
- non-stick spray
- fresh dill, chopped, garnish
- ground pepper
Preheat oven to 350 degrees Fahrenheit and lightly grease a baking dish with non-stick spray.
Steam your cauliflower according to the instructions on the bag.
Drain cauliflower and transfer to baking dish.
Whisk eggs and milk together in a bowl and add cheeses, reserving 1/3 cup.
Pour the egg mixture over the cauliflower and top with remaining cheese, garlic, salt, and pepper.
Place in the oven and bake for 40 minutes, or until the cheese is melted and the top is golden brown.
Remove from oven, garnish with fresh dill, and serve immediately.
