  • 1 lb. ground beef
  • 1 onion, diced
  • Salt and pepper to taste
  • 2 cans enchilada sauce
  • 12 flour tortillas
  • 1 C. mozzarella or other preferred cheese

In a large skillet, heat oil and sauté onion until softened. Add in ground beef and brown until no longer pink. Season with salt and pepper and pour in 1 can of enchilada sauce. Simmer for 10 minutes. Assemble enchiladas with beef mixture and a sprinkle of cheese. Arrange in a greased baking dish, cover with foil, and freeze. Once ready to cook, let thaw overnight completely. Preheat oven to 350 degrees, top with extra sauce, cheese, and extra toppings, and bake for 20 minutes.
