This recipe is a little different than your usual sweet potato casserole. It is easy to prepare and delicious!

  • 2 lb. sweet potatoes peeled and cubed
  • 3/4 C. milk
  • 6 Tbs. butter, melted
  • 3 eggs, beaten
  • 1/4 C. maple syrup
  • 1/2 tsp. vanilla extract
  • 1/2 C. sugar
  • 3 Tbs. flour
  • 1/2 tsp. cinnamon
  • 1/8 tsp. cloves
  • Topping
  • 1/2 C. vanilla wafer crumbs
  • 1/4 C. packed brown sugar
  • 2 Tbs. melted butter

Place sweet potatoes in large saucepan; cover with water. Bring to a boil and cook 25-30 minutes or until tender. Drain and place in mixing bowl. Smash potatoes. Add milk, butter, eggs, maple syrup and vanilla; mix well. In a small bowl, combine dry ingredients. Add to potato mixture; mix well. Transfer to a greased 2-qt. baking dish. Cover and bake at 375 degrees for 45 minutes. Meanwhile, combine topping ingredients in a small bowl. Sprinkle over potatoes. Bake, uncovered, 12 -15 minutes or until heated through.
