Add an extra spicy kick to your pork tacos for your next meal. If you do not want all the spice, simply remove the hot sauce and you still have some blazin’ with flavor tacos.

Ingredients

  • 1 ½ lb. pork loin roast, trimmed off fat
  • 2 Tbs. brown sugar
  • ½ tsp. chili powder
  • ¼ tsp. dried oregano
  • 4 tsp. canola oil
  • 2 medium yellow onions
  • 2 mild chili peppers
  • 1 C. orange juice
  • 16 oz. tomato juice
  • 3 Tbs. fresh lime juice
  • 1 ½ Tbs. cider vinegar
  • 3 garlic cloves, chopped
  • 1 tsp. hot sauce
  • Salt
  • Black pepper
  • 12 corn tortilla shells

Coat a slow cooker or crockpot with cooking spray. In a bowl, combine the brown sugar, chili powder, dried oregano, and ¼ teaspoon of salt and pepper. Cut the pork crosswise and rub with the spice mix. Heat 2 tsp. of canola oil in a large skillet or pan over a medium-high heat. Add pork and brown 3-4 minutes on each side. Move pork to slow cooker. Heat remaining 2 tsp. of canola oil in the same skillet, add onions and 1/8 teaspoon salt. Cook onion until brown and soft. Place onions and chili peppers on top of pork. In a new bowl, whisk together orange juice, tomato paste, lime juice, vinegar, garlic, hot sauce, and ½ tsp. black pepper. Pour liquid into crockpot with pork and vegetables. Cover and cook on low until pork is tender, 4-5 hours. Remove pork from cooker and shred. Serve pork on corn tortilla topped with juice and vegetables from crockpot and additional hot sauce.
