Ingredients

  • 1 T. garlic cloves, minced
  • 1 T. thyme leaves, minced
  • 4 C. yellow onion, chopped
  • 1 lb. polish sausage
  • 1 tsp. ground cumin
  • 4 C. leeks, chopped
  • 3 C. celery, diced
  • 3 C. carrots, diced
  • 1/4 C. olive oil
  • ¼ C. tomato paste
  • 12 C. chicken stock
  • 2 T. dry red wine
  • 1 T. salt
  • 1 ½ tsp. pepper
  • 1 lb. lentils

Directions

In a large pot, boil the lentils in water for 15 minutes. Drain the lentils. In another pot, add in the first 9 ingredients and sauté them for 20-25 minutes. Add in the remaining ingredients, including the lentils. Leave the polish sausage whole or slice it up. Let mixture simmer for 30 minutes. Enjoy!
