Extravagonzo Simple Grilled Easter Lamb Chops

Ingredients
- 4-6 lamb rib chops, 1-inch thick
- 3-6 Tbs. Extravagonzo Culinary Oil, all infusions work well,
- coarse sea salt
- freshly ground black pepper
Directions
Place lamb chops, Extravagonzo Oil and some freshly ground black pepper in a gallon Ziploc baggie. Be sure chops are coated well with oil and pepper. Let them work (knead the oil into the chops occasionally), coming to room temperature in the baggie. This should take about 30-40 minutes. Place chops on medium/high grill or grill pan in roasting temp oven. Season with salt and pepper. For medium-rare to medium chops, cook 3-5 minutes per side. You can finish with a drizzle of Extravagonzo if you like.
