  • 3/4 C. soft bread crumbs
  • 3 Tbs. milk
  • 1/2 lb. ground chuck
  • 1 garlic clove, minced
  • 1 Tbs. finely chopped onion
  • 1/4 tsp. dried thyme
  • 1/4 C. grated Parmesan cheese
  • 1/8 tsp. nutmeg
  • 1/2 tsp. salt
  • 8 C. canned beef broth
  • 1/4 C. pastina, cooked
  • 2 Tbs. chopped fresh parsley

In a small bowl, combine bread crumbs and milk. Let stand for 5 minutes. Add meat, garlic, onion, thyme, 1/4 C. Parmesan cheese, nutmeg and salt. Form into small balls. In a large saucepan, bring beef broth to a boil over medium-high heat. Add meatballs, reduce heat to low, and cook covered 8-10 minutes, until cooked through. Add cooked pastina and heat through. Sprinkle with Parmesan and pass a pepper mill and some more Parmesan cheese on the side.
