Special Mother's Day Entry When the three of us kids were growing up in Sunny Santa Barbara, CA, there were some days that were HOT and we didn't have air conditioning or a pool. We did have the ocean of course, but once in a great while my mother would take us on mini-vacations. She would pack us up with a change of cloths and swim suit and we would go to stay at the local Motel 6 back when it cost six dollars. We brought food, I'll never forget how delicious it was after a couple of hours in the pool. I wrote to her asking for the recipe for the pot roast with rice we brought and this is what she wrote back: "I make my pot roast just like my mom did." We sure had fun for six dollars, a swim in the pool and vibrating bed and a good meal.

Ingredients

  • 1 pot roast
  • Salt and peper
  • Fresh Garlic, slivered
  • Garlic salt
  • Water
  • Rice:
  • 2 C. water
  • Oil
  • Salt
  • 1 C. rice

Directions

Heat oven to 350 degrees, season meat with salt, pepper, and garlic salt. If desired, stuff fresh, slivered garlic into garlic, 2 inches apart. Add water to pot, cover and bake for 20 minutes per pound plus another 30 minutes.

For rice, simmer, covered for 20 minutes. When it is done, remove the roast, spoon in the rice and put the roast back on top. Cover and it is ready for transportation. I don't have specific measurements for the few spices, just sprinkle evenly over the entire roast.
