  • 8 C. vegetable oil
  • 1 1/2 C. milk
  • 2 eggs
  • 2 C. all-purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 3/4 C. confectioners' sugar

In a large skillet or deep frier heat oil to 375 degrees. In a seperate bowl, beat together the milk and eggs and set aside. Use a small bowl to mix the dry ingredients (flour, baking powder, cinnamon and salt) and combine the egg and dry ingredient mixtures in the larger bowl that you set aside. 

Pour about 1 cup at a time of the mixture through a funnel into the hot oil. Start at the center and continue in a swirling motion until you have created a funnel cake shape. Make sure to fry on both sides until they are a light golden brown. To serve simply drain your cake with paper towels and sprinkle with confectioners' (powdered) sugar. Enjoy!
