Fake Baked Sweet Potato

Why wait for Thanksgiving to have a sweet potato. You can make these all year long. As a side or main with roasted poultry or meat. Not too sweet, just right.

  • 1 med. potato per person
  • 1 Tbs. smart balance butter
  • 1/4 tsp. brown sugar
  • dash of salt
  • fresh ground black pepper
  • small marshmallows, optional

Wash potatoes. Pierce with a fork or knife. Place in microwave on safe plate and cook about 6 minutes per potato (remember the more you put in the longer the cooking time). Check potatoes after 6 minutes for doneness and continue cooking until you can easily put in a knife or fork. Split potatoes and remove flesh (don't go too deep as you will pierce the skin). Combine in a bowl with remaining ingredients (besides marshmallows). Taste for salt. Stuff potatoes with mixture and return to microwave for about 1-2 minutes to reheat. Sprinkle with marshmallows before serving.
