Fake Baked White Potatoes

I am always cooking and looking for short cuts that still taste good. This is definitely a time saver. Serve with a salad and you have a cheap, tasty meal.

Serving Size / Yield

1 serving


  • 1 med. potato per person (white)
  • 1 Tbs. low-fat butter
  • 2 broccoli crowns (or 1 Tbs. spinach)
  • 1 tsp. shredded mozzarella
  • dash onion powder
  • 1/4 tsp. grated parmesan
  • fresh ground black pepper

Wash potatoes. Pierce with a fork or knife. Place in microwave on safe plate and cook about 6 minutes per potato (remember the more you put in the longer the cooking time). Check potatoes after 6 minutes for doneness and continue cooking until you can easily put in a knife or fork. Split potatoes and remove flesh. Combine in a bowl with remaining ingredients. Stuff potatoes with mixture and return to microwave long enough to melt cheese.
