  • 1/4 C. frozen peas
  • 3 C. chickpeas
  • 1/4 C. fresh basil leaves
  • 1/4 C. fresh cilantro
  • 1 bunch fresh parsley
  • 4 cloves garlic
  • 1/2 C. onions, chopped
  • 1 tsp. paprika
  • 1 tsp. cumin
  • 1/4 C. lime juice
  • 1/4 C. olive oil
  • Cucumber Sauce:
  • 1 cucumber
  • 2 C. Greek yogurt
  • 1/4 C. lime juice
  • 2 Tbs. honey

Preheat oven at 350 degrees. Use a food processor to blend peas, chickpeas, basil leaves, cilantro, parsley, garlic, onion, paprika, cumin, and lime juice. Roll into falafel balls. Dip the falafel balls in olive oil. Bake for about 20 to 25 minutes.

For cucumber sauce, cut cucumber in small pieces. Blend in food processor. Mix with yogurt, lime juice and honey. Cover and refrigerate until meal is served.
