  • 3-4 large russet potatoes, cut into ¼–inch slices
  • 1 T. butter
  • 2 cloves garlic, minced
  • 1 T. flour
  • 1 C. warm milk
  • Salt and pepper to taste
  • ¼ C. pumpkin puree (or shredded pumpkin)
  • 2 C. cheddar cheese

Preheat oven to 350 degrees. In a saucepan, melt butter and sauté garlic until fragrant. Whisk in flour, cook for a minute as mixture thickens, and add milk. Season with salt and pepper, whisk well, and bring to a simmer. Once sauce thickens, remove from heat and stir in pumpkin puree. In a greased baking dish, layer potato slices and cheese until you run out of layers. Pour sauce over potatoes and bake for 1 hour until golden and bubbly.
