Celebrate Halloween with these cute pumpkin cupcakes. These sweet treats are easy and quick to make, and kids are sure to enjoy making and eating them!

  • 1 box spice cake mix
  • 1/4 C. vegetable oil
  • 2 eggs
  • 1 1/4 C water
  • 1 can white frosting
  • non-stick spray
  • 1 bag chocolate chips

Spray two cupcake tins. Mix the spice cake ingredients together. Spoon batter into prepared pan, filling each cake halfway. Bake at 350 degrees Fahrenheit for 15 minutes and let it cool for about five minutes in the pan. Place onto a cooling rack.
After they have cooled, slice off the domed end so it is flat. Frost one mini cake on the flat side and put another mini cake on top. Frost the entire pumpkin cake or just the top and let the frosting drip down. Top off with a chocolate chip as the stem.
