Familiar Broccoli Cheddar Soup

This easy to make soup tastes just like the kind they serve at the popular bakery-cafe chains.

Ingredients

  • 4 C. chicken stock (or canned broth)
  • 1 C. half and half
  • 2/3 C. flour
  • 1/4 tsp. black pepper
  • 1/2 C. water
  • 8 oz. cheddar cheese
  • 1/2 tsp. onion powder
  • 4 C. fresh broccoli florettes

Directions

In a large non-stick saucepan, combine chicken stock, water, half & half, flour, onion powder and pepper. Whisk to combine well and cook over medium heat until boiling. Add cheddar cheese to mixture. Bring soup back to a boil over medium heat, then reduce heat to low. Add broccoli to soup and simmer 15-20 minutes or until broccoli is crisp-tender, stirring often. Serve with additional shredded cheddar cheese, if desired.

  • I prepared this for dinner last night and it was Awesome...tastes like Panera Bread....be sure to stir and cook on low use a non-stick pan to prepare..but its great!

  • this surely looks like a great recipe and I can't wait to try it! With my four boys, I think I might try putting this soup into a blender for a few seconds, it might make it easier for them to eat it. Thank You! ;o)
