Family Country Breakfast
- 2-3 large potatoes, cooked till half done, cut into cubes
- 1-2 eggs per person
- 1 1/2 C. grated cheddar cheese
- 4-5 slices cooked bacon, crumbled
- 1 med. onion, diced (optional)
- salt and pepper to taste
Saute the onion and half cooked potatoes in vegetable or good olive oil until brown and crisp in a large skillet. Add the eggs, placing them in different areas of the skillet. Season with salt and pepper. Sprinkle the grated cheese around the eggs, leaving the yolks free. Cover the skillet and cook until eggs are set. Add the bacon leaving the yolk free. Serve.
