Family Country Breakfast

Great Sunday brunch recipe for company or family. My kids and grandchildren all love this. You could add green or red pepper to the first step. (sauting the potatoes/onions) For a large crowd, put the sauted veggies into a well oiled cassorole (9x13) and add the eggs and following steps and bake in a 350 degree preheated oven. Cover tightly with foil.

Saute the onion and half cooked potatoes in vegetable or good olive oil until brown and crisp in a large skillet. Add the eggs, placing them in different areas of the skillet. Season with salt and pepper. Sprinkle the grated cheese around the eggs, leaving the yolks free. Cover the skillet and cook until eggs are set. Add the bacon leaving the yolk free. Serve.
