Family-Friendly Pasta Salad
Ingredients
- 8 oz. uncooked rotelle, pasta shells, or elbow macaroni
- 2 C. small broccoli florets
- 2 medium carrots, peeled and slices diagonally
- 1/2 C. pitted black olives
- 1/2 C. cooked fresh corn kernels (or frozen corn kernels, thawed)
- 1/3 C. vinaigrette or dressing of your choice
- salt to taste
Directions
Cook the pasta according to package directions. Just before it's done, add the broccoli and carrots to the water and allow to cook for 1 to 2 minutes. Drain and rinse pasta and veggies until cool. Combine with olives, dressing, and corn in a large bowl. Season with salt.
