Family-Friendly Pasta Salad

This pasta salad uses fun shapes and colorful vegetables to make a dish that will please the whole family.

  • 8 oz. uncooked rotelle, pasta shells, or elbow macaroni
  • 2 C. small broccoli florets
  • 2 medium carrots, peeled and slices diagonally
  • 1/2 C. pitted black olives
  • 1/2 C. cooked fresh corn kernels (or frozen corn kernels, thawed)
  • 1/3 C. vinaigrette or dressing of your choice
  • salt to taste

Cook the pasta according to package directions.  Just before it's done, add the broccoli and carrots to the water and allow to cook for 1 to 2 minutes.  Drain and rinse pasta and veggies until cool.  Combine with olives, dressing, and corn in a large bowl.  Season with salt.
