  • ½ C. butter, softened
  • ½ C. whole milk
  • 1 C. light brown sugar
  • 2 ¼ C. blueberries
  • 2 C. flour
  • ¾ tsp. salt
  • 2 tsp. baking powder
  • 2 large eggs
  • 1 ½ tsp. vanilla extract
  • ¼ tsp. almond extract
  • 2 T. white sugar

Preheat the oven to 375 degrees. Place liners in a 12 C. muffin tin. Spray liners with non-stick cooking spray. Mix the flour, baking powder and salt in a small bowl. Add the butter and sugar into an electric mixer. Add in the eggs, one at a time, mixing after each egg added to the bowl. Add in the vanilla and almond extract. Let it mix well. Add the flour mixture into the other mixture. Pour in the milk, in between adding the flour. Add in blueberries. Scoop the batter into the muffin tins. Sprinkle the sugar over the top. Bake for 30 minutes. Allow the muffins to cool in the tins for about 5-10 minutes. Serve and enjoy!
