Fancy Egg Scramble

This is a recipe from my mother-in-law, who has served this dish at every Easter brunch for well over 30 years. It has become a tradition, and everyone looks forward to the scrambled eggs. Whether it is made with Canadian bacon or sausage, it is the best egg scramble I've ever tasted.

Ingredients

  • 1 C. (4 oz.) diced Canadian bacon
  • 1/4 C. chopped green onion
  • 3 Tbs. butter or margarine
  • 12 beaten eggs
  • 1-3 oz. can mushrooms drained
  • 4 tsp. butter or margarine melted
  • 2 1/4 C. bread crumbs (3 slices of bread)
  • 1/8 tsp. paprika
  • Cheese Sauce:
  • 2 Tbs. butter or margarine
  • 2 Tbs. flour
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2 C. milk
  • 1 C. shredded American cheese

Directions

In large skillet, cook Canadian bacon and onion in the 3 Tbs. butter or margarine until onion is tender but not brown. Add eggs and scramble just until set. Fold mushrooms and eggs into cheese sauce (see recipe). Turn into 11x8x2-inch baking dish. Combine remaining melted butter, bread crumbs and paprika; sprinkle on top of eggs. Cover, chill until 30 minutes before serving. Bake uncovered in 350 degree oven for 30 minutes.

 

Cheese Sauce: Melt 2 Tbs. butter or margarine; blend in 2 Tbs flour, 1/2 tsp salt and 1/8 tsp pepper. Add 2 C. milk; cook and stir until bubbly. Stir in 1 C. shredded American cheese until melted.
