Fancy Eggplant

Ingredients
- 1 med. eggplant, cut into 8 parts
- 1 C. olive oil
- 2 C. tomato sauce
- 2 Tbs. butter
- 3 Tbs. grated parmesan cheese
Directions
Cut eggplant into 8 parts lengthwise and fry in olive oil until brown and tender. Place tomato sauce in casserole, add eggplant, sprinkle well with cheese. Dot it with the buytter and bake in oven at 375 degrees for 15 minutes.
