  • 3 medium potatoes, peeled and cubed
  • 2 lbs. beef stew meat
  • 4 medium carrots, sliced
  • 2 medium onions, sliced
  • 3 celery ribs, sliced
  • 2 C. tomato juice
  • 1 C. water
  • 1/3 C. quick-cooking tapioca
  • 1 T. sugar
  • 1 T. salt
  • 1 tsp. dried basil
  • 1/2 tsp. pepper

Place the potatoes in a greased five quart. slow cooker. Top with the beef, carrots, onions, and celery. In a large bowl, combine the remaining ingredients. Pour over the vegetables.
Cover and cook on low for about nine hours or until meat and vegetables are tender.
