Fancy Lamb Chops with Wine

Ingredients
- 2 Tbs. olive oil
- 8 loin lamb chops, 1-inch thick, trimmed
- 4 garlic cloves, lightly crushed
- 3 2-inch rosemary sprigs
- salt
- pepper
- 1 C. dry white wine
Directions
In a large skillet, heat oil over medium-high heat. When hot, pat chops dry. Sprinkle chops with salt and pepper. Then put them in the pan. Cook until they are browned, about 4 minutes. Scatter garlic and rosemary around the meat. Turn chops and brown on other side. Transfer chops to a plate.
Add wine to skillet, and bring to a simmer. Cook until the wine is reduced and slightly thickened (about 2 minutes). Return chops to the pan, and cook for 2 more minutes. Turn them in the sauce once or twice. Transfer chops to a platter, pour pan juices over chops and serve immediately.
