This bruschetta is made with cream cheese, artichokes, and red peppers. It can be served as an appetizer at parties or even eaten as a light snack.

  • 1/3 cup of roasted red bell peppers, drained
  • 1/3 cup of artichoke hearts, drained and chopped
  • ¼ cup of minced fresh parsley
  • 1/3 cup of cream cheese
  • ¼ cup or capers, drained
  • salt & pepper, to taste
  • 1 baguette
  • 1/3 cup of purple onions

Add the peppers, artichoke hearts, and onions to a food processor. Pulse a few times until the mixture is roughly chopped and refrigerate until it is ready to go on top of the bruschetta.
Slice the baguette into 1-inch wide pieces. Then place the baguette on a baking sheet and broil for approximately 5 minutes, until it is lightly toasted.
Add the cream cheese to the slices of bread and top it with all the ingredients form the food processor.
Then add the capers, fresh parsley, salt and pepper and serve immediately.
