  • 1 ¼ C. uncooked quinoa
  • 2 shallots, minced
  • 2 C. cherry tomatoes, halved
  • 4 oz. mozzarella cheese, grated
  • 2 beefsteak tomatoes, sliced
  • ¼ C. balsamic vinegar
  • 3 cloves garlic, minced
  • ¼ C. basil leaves, sliced
  • 2 T. extra virgin olive oil
  • Salt
  • Pepper

Preheat the oven to 400 degrees. In a small pot, cook the quinoa as instructed on the package. Meanwhile, drizzle the sliced cherry tomatoes with olive oil and place them into a baking sheet. Let them roast for 10 minutes. In a saucepan over medium heat, add in the minced shallots and garlic. When cooked place the quinoa, tomatoes, shallot mixture and basil into a large bowl. Stir in the grated mozzarella cheese and pepper. Transfer the mixture into a baking sheet. Layer the beefsteak tomatoes over the dish and if desired, top it with more cheese. Cover the baking sheet with foil and let it bake for 20 minutes. Meanwhile, heat the balsamic vinegar in a saucepan. Drizzle the balsamic vinegar over the dish and place a few pieces of basil leaves over the top. Serve and enjoy.
