This is the very best Christmas fruitcake recipe ever!

4 small loaves


  • 1 lb. pitted dates
  • 1 C. glazed pineapple, cut into wedges
  • 1 C. glazed whole cherries
  • 1 C. walnut halves
  • 1 C. pecan halves
  • 1 C. whole Brazil nuts
  • 3/4 C. flour
  • 3/4 C. brown sugar
  • 3/4 tsp. baking soda
  • 1/2 tsp. salt
  • 3 eggs
  • 1 tsp. vanilla

Preheat oven to 300 degrees. Prepare four 3 1/2 x 6 inch pans.  Spray with nonstick cooking spray and line with parchment paper.  Spray parchment paper.  Place all whole fruits and nuts in a large bowl.  Sift flour, sugar, baking powder, and salt over the fruits and nuts.  Mix until they are well-coated.  Beat eggs and add vanilla.  Pour over fruit, nut, and flour mixture.  Mix well. There will be very little batter.  Press firmly into prepared pans.  Bake 60-70 minutes until firm.  Let stand until cool.  Remove from pans and remove paper.  Wrap in foil or plastic wrap.  Store in refrigerator or freezer.
