Ingredients

  • ½ C. butter
  • ½ tsp. salt
  • ½ tsp. ground cinnamon
  • ¼ tsp. nutmeg
  • 1 tsp. lemon zest
  • 2 tsp. baking powder
  • ½ C. milk
  • ½ C. pistachios, chopped
  • 2/3 C. granulated sugar
  • 1 1/3 C. flour
  • ½ tsp. rum extract
  • 1 tsp. vanilla extract
  • 2 eggs

Directions

Preheat the oven to 425 degrees. Grease 10-12 muffin tins with non-stick cooking spray. Cream the butter; add in the salt, ground nutmeg, lemon zest, baking powder, milk. Mix well. Add in the chopped pistachios, granulated sugar, flour, rum extract, vanilla extract and one egg at a time. Scoop batter into each prepared muffin tin. Bake for 15-20 minutes. Sprinkle sugar over the top and enjoy!
