  • 3 Tbs. butter
  • 3 Tbs. finely chopped onion
  • 1 garlic clove, minced
  • 1 1/2 C. heavy cream
  • 1 C. grated parmesan cheese
  • 1 C. walnuts, coarsely chopped
  • 1 lb. 1.5-inch fresh or frozen ricotta cheese-stuffed ravioli
  • freshly ground pepper

In a nonreactive large frying pan, melt butter over medium heat. Then add onion and garlic and cook 2-3 minutes. Add cream and bring to a boil. Cook 3-4 minutes, until reduced to 1.25 C. Add 1/2 C. parmesan cheese and walnuts. Stir to combine. Meanwhile, cook ravioli according to package directions. Drain. Pour pasta and sauce into a large bowl and toss together. Use remaining parmesan and pepper to season.
