Ingredients
- 3 Tbs. fresh lemon juice
- 3 Tbs. olive oil
- 1 tsp. salt
- 1/2 tsp. black pepper
- 4 med. tomatoes, cut into 1/2-inch pieces
- 3 green onions, trimmed and chopped
- 1 med. cucumber, peeled, seeded and cut into 1/2-inch pieces
- 1 C. loosely packed fresh parsley leaves
- 1/2 C. loosely packed fresh mint leaves, chopped
- 4 (6-inch) pitas, each split horizontally in half
- 1 sm. head romaine lettuce (about 1lb.), coarsely chopped
Directions
In large salad bowl, with wire whisk or fork, mix lemon juice, oil, salt and pepper. Add tomatoes, green onions, cucumber, parsley and mint; toss to coat. Let tomato mixture stand 15 minutes to allow flavors to blend.
Meanwhile, toast pitas; cool. Break pitas into 1-inch pieces. Just before serving, toss lettuce and pitas with tomato mixture.
