  • 2 small pita breads
  • 1 diced cucumber
  • 3 cups grape tomatoes, halved
  • ½ diced red onion
  • ¾ cup chopped parsley
  • ¾ cup chopped mint
  • crumbled feta cheese
  • 3 tablespoon vegetable oil
  • 1 tablespoon lemon juice

Tear the pita bread into smaller pieces. Heat 1 tablespoon of oil over medium-high heat in a skillet and fry the pita bread pieces in batches until they are golden brown. Combine the remaining ingredients in a large bowl. Toss the salad and add the pita pieces. Toss gently to combine everything.
