A basic yeast roll recipe for your simplest bread needs.

  • 1 1/4 oz. pkg. active dry yeast
  • 1 C. warm water
  • 1/3 C. shortening
  • 2 C. self rising flour
  • 1/3 C. granulated sugar

Mix yeast in water until dissolved. Cut shortening into flour and sugar as you would for a pie crust. Pour yeast mixture into flour mixture and mix well. Cover with a clean cloth and let rise in a warm draft free area until doubled in bulk. Knead a little on cloth or waxed paper just to take away stickiness. Roll out and cut with biscuit cutter. Place on a well greased pan and let rise again until doubled. Bake at 400 degrees about 15 minutes or until done and browned nicely.

Note: After first rising, dough can be refrigerated until ready to use. Use half at a time, if desired, and save remaining half for another meal.
