  • 10 apples “shells” (don't throw away the pulp)
  • 1 orange, sliced
  • 1/2 cup brown sugar
  • 2 cinnamon sticks
  • 1/2 nutmeg
  • 1/2 Tbsp cloves
  • 1/2 Tbsp. cardamon
  • Enough water to cover the apples

To prevent browning, sprinkle the ‘apple cups’ with some lemon juice and set aside. Meanwhile, combine the apple pulp, water, slices of orange, brown sugar and spices and bring to a boil. Let it simmer for about 2 hours. Use a hand mixer or a fork to mash the apples and orange slices and serve the cider at room temperature, garnished with more cinnamon sticks and star anise, a star shaped spice found in most grocery store in the Asian aisle.
