Festive Chocolate Mint Dessert

This is an amazing dessert with a creamy mint center.

Ingredients

  • 1 C. (2 sticks) butter or margarine
  • 2 C. sugar
  • 2 tsp. vanilla extract
  • 4 eggs
  • 3/4 C. Hershey's Cocoa
  • 1 C. all-purpose flour
  • 1/2 tsp. baking powder
  • Mint Cream Center (recipe follows)
  • Chocolate Glaze (recipe follows)

  • Combine 2 C. powdered sugar, 1/2 C. (1 stick) softened butter or margarine and 2 Tbs. green crème de menthe liqueur (or, 1 Tbs. water, 1/2 to 3/4 tsp. mint extract and
  • 3 drops green food color may be substituted for crème de menthe) in small bowl; beat until smooth.
  • Chocolate Glaze
  • Place 6 Tbs. butter or margarine and 1 C. Hershey's Semi-Sweet Chocolate Chips in small microwave-safe bowl. Microwave at high 1 minute or until mixture is smooth when stirred. Cool slightly.
  • Variation
  • Double Chocolate Mint Dessert: Hershey's Mint Chocolate Chips may be substituted for Hershey's Semi-Sweet Chocolate Chips in glaze. Omit crème de menthe in cream center.
  • Fake Fudge - 2 ingredients
  • 1 bag chocolate chips melted
  • 1 container chocolate icing
  • Mix together and chill

Directions

Heat oven to 350 degrees. Grease 13x9x2-inch glass baking dish. Place butter in large microwave-safe bowl. Microwave high for 2 minutes or until melted. Stir in sugar and vanilla. Add eggs; beat well. Add cocoa, flour and baking powder; beat until well blended. Pour batter into prepared pan. Bake 25 to 30 minutes or until "brownie" begins to pull away from sides of pan. Cool completely in pan on wire rack. Spread Mint Cream Center On Cake. Cover; refrigerate. Pour Chocolate Glaze over chilled dessert. Cover; refrigerate at least 1 hour before serving.

Yield: about 12 servings.
