Preheat oven to 375 degrees. Prepare cake batter according to package directions. Pour 3 ½ cups of batter onto a 15x10x1 inch pan lined with wax paper. Pour remaining batter into cupcake liners. Bake cake for 15 minutes until cooked through. Lay out a clean kitchen towel, dust it with powdered sugar, and flip cake onto it. Slowly remove wax paper and carefully roll up into towel. Set aside and let cool completely. In a saucepan, heat cream until just beginning to boil. Remove from heat, whisk in chocolate chips and cornstarch until smooth. Stir in vanilla and refrigerate until spreadable. Unroll cake, spread on vanilla frosting, roll up without the towel, and frost with chocolate frosting. Use one of your leftover cupcakes to make a branch off of the log. Use a fork to make grooves along the “trunk” and dust with powdered sugar.
