This winter salad recipe is made to perfection with the help of seared prawns. We recommend searing your seafood in light lemon butter, pepper and salt, but feel free to experiment with your own special marinade!

  • 4-5 C Mixed Greens (or salad green of choice)
  • 4 Strips of Bacon, Cooked
  • 1/2 lb scallops, cleaned
  • 1 Tbs butter
  • Juice of one lemon
  • Salt and pepper
  • Croutons
  • Poppy seed vinagrette

In a frying pan, cook up bacon and degrease. At the same time, sear scallops in an adjacent frying pan in combination of lemon juice, butter, salt and pepper. Add lettuce, croutons, scallops and bacon to large salad bowl. Mix well. Add in any other additional toppings and top with a poppy seed vinaigrette.
