  • Cranberry layer:
  • 1 (3 oz.) pkg. cranberry gelatin
  • 1 C. boiling water
  • 1/2 C. Southern Comfort
  • 1/2 C. citrus-infused vodka
  • Pumpkin layer:
  • 1 (1 oz.) pkg. gelatin
  • 1/3 C. canned pumpkin
  • 1/4 C. granulated sugar
  • 1/8 tsp. allspice
  • 1/8 tsp. cinnamon
  • 1 pinch ground nutmeg
  • 1/2 C. vodka
  • 1/2 Tbs. cold heavy cream
  • whipped cream, for layering

Place 1 C. cold water in the top of a double boiler and sprinkle the gelatin over the top. Let it sit for 3 minutes. Heat the gelatin after 3 minutes over a gentle simmer until the granules are dissolved. Add the pumpkin, sugar, and spices. Heat, stirring occasionally, until the pumpkin and sugar are melted. Remove from heat and let cool for 30 minutes. In a medium bowl, combine the vodka with 1/4 C. cold water and heavy cream. Whisk in the pumpkin mixture and divide it in half. Put half the mixture into 8 large glasses.Put the other half into a pan for later. Chill glasses and pan until firm, at least 4 hours. Top the layer in the glass with a layer of whipped cream.

For the cranberry layers, place the gelatin in a heatproof bowl. Add the boiling water and stir until the gelatin is dissolved. Add in the Southern comfort and vodka. Stir well. Pour the mixture into a pan and chill until firm, about 2 to 4 hours.

Once the cranberry jello is chilled, scoop some of it into the glasses with the pumpkin jello. Top with a layer of whipped cream. Repeat the layers, using both jellos, until glasses are full or you run out of jello.
