  • 8 large heirloom tomatoes
  • ¼ C. butter
  • 1 onion
  • 1 clove garlic
  • 1 lb. ground beef
  • 1 T. soy sauce
  • 1 tsp. Salt
  • 1 tsp. Pepper
  • 1 T. fresh basil
  • ¼ C. water
  • ½ C. ready rice
  • ¼ C. olive oil
  • ½ C. feta cheese

Preheat oven to 375. Cut off the tops of the heirloom tomatoes and scoop out the insides, transferring the meat of the tomato to a large bowl. Prep a large baking dish by spraying the bottom with cooking spray and arrange the pitted tomatoes.

Melt butter in a large pan over medium heat. Add minced garlic and chopped onion to the butter until the onions are soft and slightly translucent. Continue cooking by adding in the ground beef, soy sauce, salt and pepper. Leave over the heat until the beef is cooked all the way through: 6-8 minutes.

Mix in the tomato meat, water, and basil to the browned beef. Let simmer for 15 minutes before adding in cooked ready rice. Bring the mixture to a full boil and then remove from heat.

Spoon the rice and beef into the tomato shells. Bake for 30 minutes. Cover the tomatoes with feta cheese and continue cooking for another 20 minutes or until the tomatoes are soft on the outside.
