Feta and Olive Meatballs

Feta and Olive Meatballs

A greek twist to making meatballs.

Ingredients

  • 1/2 C. chopped parsley
  • 1 tsp. dried oregano
  • 2 Tbs. finely chopped onion
  • 1 lb. ground lamb or beef
  • 1/2 C. crumbled feta cheese
  • 1/2 C. pitted green olives - coarsely chopped
  • 2 eggs

Directions

Combine all the ingredients with your hands and shape into 16 meatballs. Place the meatballs about 2-inches apart on a baking sheet and broil, about 3-inches away from the heat until browned on top. Turn over and broil on the other side. You don't really need any salt in this recipe as the feta and olives provide enough. You can also fry the meatballs in olive oil, but I think broiling is easier. Try the spice mixture. It tastes great in the meatballs.

  • You can probably serve them with a side or in sauce. Depends on your tastebuds. Personally, I would love the feta, olives and tomato sauce.

  • This recipe sounds very good, but I am wondering if they are to be put into a sauce and served with pasta? Or are they served plain? Would really like a reply from someone. Thank you

  • I love the combination of feta and olives with beef. You can use 4% fat ground beef to make it even healthier.
