Feta and Olive Salsa

Ingredients
- 1 large ripe avocado, cubed
- 2 large ripe tomatoes cubed
- 4 oz. black olives
- 1 red onion roughly chopped
- 4 oz. feta cheese
- 1 Tbs. chopped fresh parsley
- 2 Tbs. olive oil
- Juice of a lemon
Directions
Place the avocado, tomatoes, olives, onion and feta in a serving bowl and toss well together. Whisk together the parsley, olive oil and lemon juice and drizzle over the feta salsa. Serve immediately.
