Ingredients

  • 2 red skinned sweet potatoes
  • 2 ounces cubed feta cheese
  • 1 ounce thinly sliced sun dried tomatoes
  • ΒΌ cup chopped parsley
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Directions

In a bowl, mix the feta cheese, tomatoes, parsley, and olive oil. Season with salt and pepper and cover with plastic wrap until you are ready to serve. Preheat the oven to 400 degrees F and pierce each potato several times with a fork and then place the potatoes on the middle rack of the oven and put a sheet of foil on the lower rack. Bake for 50 minutes. Let the potatoes cool slightly and then slice the sweet potatoes lengthwise in the center. Top the potatoes with the feta parsley mixture.
