Feta Cheese Potato Salad

Feta cheese lends an expected touch to potato salad made with vinegar and Dijon mustard.

  • 5 lbs red potatoes
  • 1 C. olive oil
  • 1/2 C. white vinegar
  • 2 Tbs. Dijon mustard
  • 1/2 lb. crumbled feta cheese
  • 1 bunch green onions -- chopped
  • 5 1/2 C. celery -- chopped
  • 1/4 C. black olives -- sliced
  • salt and pepper to taste

Wash the potatoes well and cut into 1î cubes. Boil them in lightly salted water for 15-20 minutes. Drain and cool. Mix the oil, vinegar and mustard. Add the potatoes and stir gently. Mix in the feta, green onions and celery. Salt and pepper to taste and serve.

Serves 8-10.
