Feta, Tomato, and Arugula Sandwich

Serving Size / Yield
- 1 Tbs fresh lemon juice
- 2 tsp olive oil
- 3 C arugula
- 1 medium tomato, cut into thin slices
- 1 red onion, cut into thin slices
- 1/3 C crumbled feta
- Four Artisan Bread Loaves.
Mix arugula and tomato slices in bowl, garnishing with olive oil and lemon juice.
Serve on slices of artisan bread with feta cheese.
