This super quick and easy chili is ideal to make when you're really hungry and have very little time. Just brown the ground beef, add in the vegetables and warm to perfection.

  • 2 (14.5 ounce) cans black beans drained and rinsed
  • 1 pounds ground beef
  • 1 tablespoon olive oil
  • 1 chopped onion
  • 2 chopped garlic cloves
  • 1½ tablespoons chili powder
  • 2 teaspoons oregano
  • ½ teaspoon red pepper flakes
  • 1 (15 ounce) can tomato sauce
  • 3 cups fresh or canned corn kernels
  • 1 chopped chili pepper
  • 1 cup water

Brown the ground beef in a medium skillet. Add tomato sauce, water and corn and let simmer for 10 minutes. In a large soup pot, heat olive oil over medium heat. Add onion, chili pepper, garlic, chili powder, oregano, red pepper flakes and stir. Pour the beef mixture into the pot and in cilantro. Bring the complete mixture to a boil. Reduce to a simmer and cover for 5 minutes.
