  • 2 T. olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 red chili pepper, seeds removed and diced
  • 2 tsp. oregano
  • 1 tsp. thyme
  • 1 can crushed tomatoes
  • 1 T. red wine vinegar
  • 1 tsp. sugar
  • Salt and pepper to taste
  • Fresh basil leaves
  • 1 box penne pasta, cooked and drained

In a medium saucepan, heat oil and sauté garlic, chili pepper, and onion until softened. Add in tomatoes with juice, vinegar, sugar, salt, pepper, oregano, and thyme. Stir well and simmer for 15 to 20 minutes until sauce has thickened. Toss in penne and serve with fresh basil leaves.
