Serving Size / Yield
- 1 cup instant brown rice
- 1 beef rib eye steak, chopped
- 1/2 cup green beans, frozen
- 1/2 cup corn, frozen
- 1/2 cup carrots, chopped
- 1/2 cup peas, frozen
- 1/4 refried beans
- olive oil
- 3 tbs water
- Salt and pepper, seasoning
- 2 tsp oilive oil
Cook the rice according to package directions.
In a skillet, add olive oil and heat.
Add in vegetables and saute in oil.
Season with salt and pepper.
Add in 1/4 refried beans and dilute with water.
Add water as needed, mixture shouldn't be too thick.
Continue cooking for a few minutes.
Mix in rice and continue cookie until heated and set aside.
In another skillet, use 2 tsp of oil to stir fry beef.
Continue cooking until beef is no longer pink.
Mix in with the rice and serve.
