  • 1 Tbs. oil
  • 1 med. onion, diced
  • 2 C. mixed frozen vegetables
  • 2 1/2 C. water
  • 1 8-oz. can whole tomatoes or 2 med. fresh tomatoes
  • 3 cubes or 1 tsp. low-sodium beef bouillon powder
  • 1/2 C. broken pieces spaghetti, uncooked

Heat the oil in a large pot over medium heat. Add the onion and vegetables to the hot oil and cook them, stirring occasionally, until they are lightly browned, about 10 minutes. Slowly add the water, the tomatoes with their liquid, and the bouillon cubes. Over high heat, heat the soup to boiling, stirring to break up the tomatoes. Reduce the heat to low. Cover and simmer for 20-30 minutes or until all vegetables are tender. Add spaghetti. Stir occasionally. Do not overcook.
