Filled Cookies
Ingredients
- 1 C. shortening
- 1 1/4 C. firmly packed brown sugar
- 2 eggs
- 2 3/4 C. sifted all purpose flour
- 2 tsp. cream of tartar
- 1 tsp. baking soda
- 1/4 tsp. salt
- Filling:
- Thickened raisins or prepared pie filling (strawberry, apricot or cherry)
Directions
Cream shortening and sugar in large mixing bowl; add eggs one at a time, beating after each addition. Add sifted flour, cream of tartar soda and salt and mix well. Roll into small balls the size of walnuts. Flatten with glass dipped in granulated sugar. Place 3 inches apart on un-greased cookie sheet. Add filling to each cookie. Put another cookie on top of filling and press edges together slightly. Bake for 8-10 minutes at 350 degrees.
Yield: 24 cookies
Note: These keep well and are quite moist and very tasty.
