  • 1 Pound of Boneless Chicken Breast
  • 2 Cups of Rice
  • 1 Pineapple
  • 1 Red Diced Red Pepper
  • ¼ Cup of Soy Sauce
  • 2 Tablespoons of White Wine Vinegar
  • 1 Teaspoon of Grated Ginger
  • 2 Crushed Cloves of Garlic
  • 2 Tablespoons of Sesame Oil

Start by cooking your rice and cutting your pineapple down the center lengthwise. Cut out the center fruit of the pineapple to create a bowl for the finished dish to be served in, and slice the fruit you cut out into small pieces and set it to the side. Then, and combine the soy sauce, vinegar, ginger, and garlic in a small bowl and mix well.

Next, cut your chicken into bite-sized pieces. Pour the sesame oil into a skillet over a medium-high heat and fry the pieces of the chicken until they’re evenly browned -- around 5 minutes. Temporarily remove the chicken to add the diced pepper and sliced pineapple to the skillet until they’re completely cooked. Add the remaining sauce until it thickens, and then add the chicken and rice into the skillet.

Serve by scooping into the carved-out pineapples for an added bit of flair to the meal!
