  • 1 chicken cut into 8 pieces
  • 2 tsp. salt
  • 1 ½ C. flour
  • 1 tsp. black pepper
  • ½ tsp. cayenne pepper
  • ¼ tsp. paprika
  • ¼ tsp. onion powder
  • 1 T. garlic powder
  • 1 C. buttermilk
  • Vegetable oil for frying

Combine the flour and spices in a shallow bowl. Pour the buttermilk into a second shallow bowl. Dip the chicken in the flour, then in the buttermilk, then again in the flour mixture.
Heat the oil to 350 degrees in a deep pot. Do not fill the pot more than 1/2 full with oil.
Carefully place the chicken in the oil. Work in small batches to avoid overcrowding.)Fry the chicken until golden brown, turning once. The batch should be done in 10 to 20 minutes depending on the size of the pieces. Check for to see if it is ready to eat by piercing the meat with a fork. The juices should run clear.
Place the cooked chicken on paper wells to drain.
