  • 2 tsp. cumin
  • 8-10 strips bacon, chopped
  • 3 lb. ground beef
  • 2 onions, diced
  • ¼ C. chili powder
  • 2 tsp. sweet paprika
  • 1 tsp. oregano
  • Salt and pepper to taste
  • ½ tsp. dried thyme
  • 4 cloves garlic, minced
  • 1 ¾ C. beef broth
  • 1 (28 oz.) can pureed tomatoes
  • 1 (6 oz.) can fire roasted corn, drained

In a skillet, cook bacon and transfer to a crockpot. In bacon grease, brown ground beef until no longer pink. Add in onions and garlic and cook until tender. Season with chili powder, paprika, cumin, oregano, salt, pepper, and thyme; cook briefly to coat. Transfer to your crockpot, add in beef broth, pureed tomatoes, and corn, and stir well. Cook low for 6 to 8 hours.
