Ingredients

  • 1 large can crushed pineapple
  • 4 Tbs. butter
  • 3/4 C. brown sugar
  • 1/3 C. shortening
  • 1/2 C. sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 cup sifted flour
  • 1 1/4 tsp. baking powder
  • 1/4 tsp. salt

Preheat oven to 350 degrees


Melt butter in pan. Add brown sugar. Pour pineapple in bottom of pan.


Cream together shortening and sugar. Ass eff and vanilla, beat until fluffy. Sift together dry ingredients. Add gradually to mixture, beating after each addition. Spread over pineapple. Bake for 45 minutes. Let it cool and then invert onto plate.
